Description & Requirements

Summary

Prepares sushi, specials and other menu items in accordance to standardized recipes and high standards of Enso Sushi, while delivering an exceptional guest experience. Ensures stations are set and fully stocked with fresh ingredients prior to each shift. Completes daily side work in a timely manner and in quantities appropriate for business volume.

 

Essential Duties and Responsibilities include the following. Other duties may be assigned.

 

Possess knowledge of authentic Sushi preparation and be able to work all stations in the kitchen.

 

Prepare all types of Sushi.

 

Prepare all types of Sashimi.

 

Perform all types of Sushi knife skill tasks in the time allotted.

 

Possess knowledge of new specialty Sushi products.

 

Prepare all food items including sauces, fish and shellfish, according to specified recipes.

 

Check the quality and temperature of food items, ensuring consistency and standards are followed.

 

Rotate food in coolers, dry storage and personal mise en place to ensure freshness and reduce food waste and spoilage.

 

Put away daily deliveries, weighing up to 100 pounds.

 

Ensure all food orders are served in a timely manner.

 

Set up plates and coordinate orders.

 

Clean, organize and maintain stations, refrigerators, freezers according to daily cleaning schedule and HACCP standards.

 

Adhere to strict sanitation codes and comply with all Cache Creek Casino Resort safety, healthy and sanitation policies and procedures.


Assist with the breakdown of stations, including labeling and storage of leftovers

 

Report all faulty equipment or unsafe conditions immediately.

 

Help others as needed to contribute to and foster an environment of teamwork.

 

Supervisory Responsibilities

This position has no supervisory responsibilities.

 

Qualifications

To perform this job successfully, an individual must be able to perform each essential duty satisfactorily with or without reasonable accommodations. The requirements listed below are representative of the knowledge, skill, and/or ability required.

 

Experience and/or Education

Minimum of three years line experience in a high volume Sushi Restaurant; or equivalent combination of experience, education, and/or training.

 

Age Requirement

Must be at least 18 years of age.

 

Mathematical Skills

Ability to add, subtract, multiply and divide in all unites of measure, using whole numbers, common fractions, and decimals.

 

Language Skills

Ability to read and interpret documents such as safety rules, operating and maintenance instructions, and procedure manuals.

 

Reasoning Ability

Ability to apply common sense understanding to carry out instructions furnished in written, oral, or diagram form.

Cache Creek Casino Resort Tribal Gaming License.
