  • Description & Requirements

    Summary

    Prepare all cold food products for assigned restaurants as prescribed by menus.  Manage staff and food product within the Pantry kitchen to insure the highest level of consistency and quality is provided.

     

    Essential Duties and Responsibilities include the following. Other duties may be assigned.

     

    Promote Cache Creek Casino Resort in a positive manner.

     

    Develop and execute all recipes for all prepared food product.

     

    Manage assigned culinary staff.

     

    Coach and counsel staff as required.

     

    Master requisitioning of all necessary food products through I.P. System.

     

    Control food costs to budget.

     

    Control quality presentation of all food products.

     

    Carve ice and tallow and other display mediums as assigned.

     

    Manage sanitation and safety in kitchen to accepted standard.

     

    Train staff on all equipment to insure proper operation.

     

    Manage temperature of Preparation Kitchen to insure it is within accepted guidelines of 55°F.

     

    Coordinate with all required support departments as necessary for proper execution of product display.

     

    Attend meeting as scheduled.

     

    Other duties as assigned.

     

    Supervisory Responsibilities

    Manages one subordinate supervisor who supervises a total of 12 employees in the Garde Manger. Is responsible for the overall direction, coordination, and evaluation of these units. Also directly supervises 12 non-supervisory employees. Carries out supervisory responsibilities in accordance with the organization's policies and applicable laws. Responsibilities include interviewing, hiring, and training employees; planning, assigning, and directing work; appraising performance; rewarding and disciplining employees; addressing complaints and resolving problems.

     

    Qualifications

    To perform this job successfully, an individual must be able to perform each essential duty satisfactorily with or without reasonable accommodations. The requirements listed below are representative of the knowledge, skill, and/or ability required.

     

    Experience and/or Education

    Two years as Garde Manager Chef at large multi-outlet hotel.  Ice carving and tallow carving experience required. Two year culinary degree/diploma required.  High school diploma or equivalent required.  Advanced Ice Carving class required.

     

    Age Requirements

    Must be at least 21 years of age.

     

    Language Skills

    Ability to read, analyze, and interpret general business periodicals, professional journals, technical procedures, or governmental regulations.  Ability to write reports, business correspondence, and procedure manuals.  Ability to effectively present information and respond to questions from groups of managers, clients, customers, and the general public.

     

    Mathematical Skills

    Ability to calculate figures and amounts such as discounts, interest, commissions, proportions, percentages, area, circumference, and volume.  Ability to apply concepts of basic algebra and geometry.

     

    Reasoning Ability

    Ability to apply common sense understanding to carry out instructions furnished in written, oral, or diagram form.  Ability to deal with problems involving several concrete variables in standardized situations.

    Cache Creek Casino Resort Tribal Gaming License.

    Sanitation certificate.
